A simple post with a simple recipe this week to celebrate the holiday this upcoming weekend. Happy 4th of July to everyone in the States!
It seems that I tend to go through trends in my cooking life. Recently, I’ve been in a total dessert mode (see here, here, and here), but I’ve now moved into a healthy dinner phase with this One Pot Garlic Shrimp Pasta.
Especially on holiday weeks like this shortened week we’re in now, one pot dishes are magical in my world. They’re typically easy to make, include few ingredients, and minimal clean up. This means more time on other important things, like spending time with my family and a friend who is still in town for a short while longer. While I love cooking and baking, any recipe that can save me valuable time in the kitchen deserves an A in my book!
I made this One Pot Garlic Shrimp Pasta last night and knew that it needed to immediately get up on the blog.
To make this delicious meal yourself:
ONE POT GARLIC SHRIMP PASTA
Ingredients

8 oz. linguine

2 tablespoons extra virgin olive oil

2 tablespoons butter
-
3 cloves garlic
-
2 teaspoons crushed red pepper
-
1/2 pound cooked shrimp
-
1 1/2 tablespoons oregano
-
2 cups baby spinach
-
Salt and pepper to taste

Optional: crushed walnuts and/or shredded parmesan cheese
Materials Needed

Large pot
-
Large pasta spoon
-
Large sauce pan
-
Spatula
-
Sieve
Instructions
-
In the large pot, boil water and cook the pasta until al dente. Stir frequently using the large pasta spoon, Drain and set aside pasta once cooked.

In the large sauce pan, heat the olive oil and butter to fully combine. Add the garlic and crushed red pepper; cook until fragrant.

To the pan, add the cooked shrimp for a minute to warm. Salt and pepper to taste. Following, add the oregano and spinach; cook until wilted.

Serve pasta and top with the combination from your sauce pan. Top with your favorite options, with our preference being lightly chopped walnuts and shredded parmesan cheese. Enjoy!
