We’ve been attending several potlucks lately. While I love that potlucks offer options for any taste and palette, I have a MAJOR grazing issue. I mean, the Derby potluck this past weekend had FOUR cakes because it was one girl’s birthday – I still can’t decide if the ice cream cake or the Derby cake was my personal favorite. With all of these seasonal fiestas coming up on the calendar, I’ve been trying out several different combinations trying to find something that is finished by the group, but is in the healthier lines. This appetizer does the trick.
The one I pulled together this weekend was a winner! These bad boys disappeared, but they’re definitely on the healthy side of the spectrum. This “recipe” was somewhat sampled by Triscuit in our local Kroger, but I added some herbs and made it a lighter option. I was able to pull them together quickly just prior to the party, and they’ve been equally as simple to make as an appetizer for Ray and I to snack on prior to dinner this week. Pending the number of attendees for the party you’re attending, I plan three to four per person. On an original Triscuit, stack a dollop of Creamy Swiss Light Laughing Cow cheese, a half a red seedless grape or two, and a bit of rosemary. Each or these is ~30 calories, and is fairly low on everything beyond the sodium in the Triscuit. Feel free to swap out the cracker for another cracker option that has limited additive flavors if this a concern.
