I’ll be honest… being a full time blogger and writer can be really tough some days. We’re hiding behind a computer all day, working on things that we hope fill a void. Free stuff is nice and going to events is always a fun past time. But that would never have convinced me to quit my job and jump into this experience with both feet.
But the second that I see an email that says, “you helped me to think more positively today”… or when I have a conversation with a reader that tells me, “you helped me look at my life differently”… I get all the chills.
Thank you for creating SST. You guys are the captains of this ship and I cannot wait to see where we’re going next.
But now to our tasty recipe…
With this colder weather finally making it’s way to Denver (albeit, likely temporarily), I’ve been craving healthy, warm carbs. I’m more than happy to enjoy traditional spaghetti and meatballs, but what’s a non-alfredo fan to do when she’s craving a creamy sauce?
Enter the sun-dried tomato pesto!
It’s a creamier pesto sauce, due to the cheese and natural yogurt, but just as delicious as a traditional basil pesto. Unlike most Italian-type dishes, I don’t feel that overuses sun dried tomatoes, but rather, they enhance the dish, making it even more pleasing to the appetite.
This is one dish that I can’t wait to keep enjoying throughout the entire season!
Sun Dried Tomato Pesto with Pasta
Prep Time: 5 minutes
Total Time: 15 minutes
Serves: 5 adults
Ingredients
- 2 cloves garlic
- 45 large basil leaves
- 1 cup mascarpone (or ricotta)
- 1 cup plain yogurt
- Jar sun dried tomatoes (rinsed)
- Freshly ground pepper to taste
- 1 box farfalle pasta (about 1 1/4 lbs)
Directions
- With your food processor running, put the garlic through the tube to mince.
- After minced, turn off the food processor and add the basil, mascarpone, yogurt, and sun dried tomatoes. Process the mixture until it is almost smooth. Season with pepper and mix again to completely combine.
- Cook the pasta until al dente. Pour ~1/2 cup of the pasta water over the sauce mixture to thin out and stir to combine. Serve the sauce over the freshly cooked pasta and enjoy!
