Last night, we decided to make a simple, but incredibly tasty recipe for dinner using some of the healthy ingredients we had available in the kitchen. This is actually a slightly altered take on a recipe that my dad made when I was a kid. I always love to create my own take on recipes I’ve known for years, just to see what kind of flavors we can pull together.
For this recipe, combine in a pan:
1/2 red onion
1 red pepper
1 orange pepper
1/2 bundle of small red potatoes
Small bit of oil, pepper, salt, and crushed red pepper
Put in the oven at 425 degrees for 1 hour
Separately, on the grill, toss on four Italian sausages until almost completely cooked through. When they are almost complete, slice up and toss on the pan for the last 5 minutes.
I love that the flavors all combine together so perfectly that it keeps your taste buds guessing. The italian sausage and potatoes both take on the taste of the of the vegetables, and the spices between the vegetable play incredibly well together. This dish will definitely leave you feeling satisfied and excited for the next bite!
