Prioritizing for Personal Growth
This week has been amazing. I’m back in Chicago visiting friends and family for the week and it’s been a whirlwind of a trip. But I’ve also been sure to take some quiet time for myself for reflection.
When you feel like you’re being pulled in several directions, how do you stay focused on your key priorities? (Please share in the comments section below.)
Sometimes it’s really hard to feel like you’re disappointing people. Being selfish is okay some of the time, but I don’t think it’s a quality that’s in our original DNA. Balancing what might feel selfish and what is selfish becomes such a difficult balance to walk. And the pressures of that feeling can sometimes really weigh us down.
The only way that I’ve been able to walk this balance is by trying to please everybody, some of the time. For example, I’m trying to see everyone I can this week that I know I won’t be able to see over the holidays. I’m seeing my parents and Ray’s parents, but not for the extended times I usually would because I’ll see them over the holidays.
Especially with us just getting married, I’d love your tips on how you walk this balance between family and friends when you’re stuck with limited time!
But now to our recipe!
These Peanut Butter & Jelly Brownie Bars were kind of a random creation. I wanted something sweet, but not overly unhealthy… but I also didn’t want to go to the store for extra ingredients. (#lazyAF) I ended up making them a few times to get the right combination of peanut butter and jelly taste, because the peanut butter tends to overwhelm the jelly a bit. But, with a little bit of hard work, these turned out to be a delicious throwback recipe that will be sure to please current children, or those of us that are just a child at heart.
Peanut Butter & Jelly Brownie Bars
Prep Time: 15 minutes; Bake Time: 25 minutes
Total Time: 40 minutes
Yields: 20 Bars
Ingredients

3/4 cup flour

1/4 cup almond flour

1/2 cup creamy peanut butter

1/3 cup brown sugar

3 tablespoons preferred jelly (I used strawberry)

1 egg

1 tablespoon coconut oil (melted by putting in microwave for 30 seconds and stirring vigorously)

3/4 teaspoon baking soda
- 1 teaspoons vanilla extract

1/2 teaspoon salt
Directions (High Altitude)

Combine both flours, brown sugar, baking soda, and salt in a large bowl. After fully combined, add in the melted coconut oil, egg, and vanilla extract and fully combine.

Add in the jelly and slowly add in the peanut butter. Fold in to fully combine.

Preheat the oven to 350 degrees Fahrenheit and grease an 11 x 7 pan. Even it out with a spatula. Bake for 20-25 minutes, or until a toothpick inserted into the center of the baking dish comes out clean.

Allow to cool for 10 minutes and enjoy! Store covered up to one week.
