After living near the South for seven years, I quickly fell in love with the Kentucky Derby traditions. It’s the first weekend in May, but the Derby holiday season lasts for a full week. While I now live several states west, the season rolls on. One of the traditions that I’ll never leave (by choice) is getting together with a great group to watch the race and sing, “My Old Kentucky Home.”
In getting together with friends for this daytime celebration, a favorite dish to bring to the party is our Mama’s Egg Casserole. It’s easy to make, filled with (primarily) healthy ingredients, and is a certain crowd pleaser!
24 oz. frozen hash browns
2 c. diced ham
6 oz. shredded cheddar cheese
6 oz. shredded mozzarella cheese
6 eggs
1/2 tsp. salt
1 c. milk
minced onion & green pepper (optional)
In 9 x 13 baking dish sprayed with Pam, layer potatoes, then ham, onion, green pepper, and cheese. In bowl, combine eggs, salt, and milk, and pour over layers. Cover and refrigerate at least three hours (optional, but lets it settle.) Uncover and bake at 350 for one hour. Enjoy!
