Living a Life of Gratitude
Last week, I think that a lot of us in America felt obliged to be “thankful” for areas of our life. Even though, when we’re honest, for many of us it may feel like a day of stress – those of you that feed groups of family and friends on Thanksgiving, props to you!
I absolutely don’t think we should fake it with a heart of gratitude. In fact, in case you’re new around here, I don’t think that we should “fake” anything.
But I do think that we honestly need to consider an attitude of gratitude to be the key to success.
When we stop expecting things, and start appreciating what we do have, our entire universe changes to be a lot brighter. And that makes life become a lot better.
It’s a huge mind shift, and I do not mean to be overly-simplifying it, but living a life of gratitude is something that I think we should all strive for more regularly.
For myself, I’ve been struggling with body image issues lately, which has, I’ve found, actually been linked to stress. I need to, instead, be thankful for the opportunities I’m receiving and thankful for the healthy body I have today. I need to be thankful for this chance to fall back in love with my body.
What can you show gratitude towards that you’ve been struggling with in your life?
When I was home in Chicago before Thanksgiving, I decided to make my mother and her boyfriend dinner. While it ended up being a kind of hobbled together meal, full of random recipes I was interested in trying, these turkey meatballs ended up being the star of the show.
Easy to make, and even her foodie boyfriend loved them! I consider that a winning recipe.
3-Ingredient Turkey Meatballs
Prep time: 10 minutes; Cook time: 40 minutes
Total time: 50 minutes
Yields: 20 meatballs
Ingredients

3 lbs lean ground turkey

1/2 cup garlic breadcrumbs

1/2 cup barbeque sauce (+ 3 tablespoons for topping)
Directions

Pre heat oven to 350 degrees Fahrenheit

In a medium bowl, mix the ground turkey, breadcrumbs, and 1/2 cup barbeque sauce until completely combined

With your hands, shape medium-sized meatballs and place on a baking sheet

Bake for 20 minutes, then brush the remaining 3 tablespoons of barbeque sauce evenly on top of the meatballs

Bake for an additional 20 minutes or until the center of the meatball is 163 degrees Fahrenheit – Enjoy!
