No Bake Peanut Butter Cookies

I mentioned last week that no bake recipes have been my go-to lately, and I wasn’t kidding.  Right now, I extremely dislike the idea of turning on my oven or eating anything warm.  A cool treat, like these No Bake Peanut Butter Cookies, on these hot summer days is just what the doctor ordered!  Add a side on freshly made Cool Whip and I’m in heaven.


Truthfully, I had absolutely no intention of sharing this recipe for No Bake Peanut Butter Cookies on the blog.  They’re SO easy to make that it almost seems unfair.  But these were the first No Bake recipe I created, and they were devoured at such a quick rate that I decided they deserved the extra attention!

(Rumor has it that this recipe is also 21 day fix friendly as “1 yellow treat swap.”  Always great to stay on track!)

No Bake Peanut Butter Cookies

No Bake Peanut Butter Cookies

Total Time: 15 minutes

Serves: Makes around 14 cookies

Ingredients

  • 1 cup creamy peanut butter
  • 2 1/4 cup quick oats
  • 3/4 cup honey
  • 1/2 cup coconut oil (or butter)
  • 2 teaspoons of vanilla extract
  • Optional: 6 tablespoons hot cocoa powder for a little chocolate flavoring

Materials Needed

  • Medium sauce pan
  • Parchment or wax paper
  • Medium sized pan or hard surface to refrigerate the cookies
  • Large ladle or spoon

Directions

  1. Melt peanut butter, honey, and coconut oil in the medium-sized sauce pan.  Consistently stir until the mixture is a smooth, creamy texture.
  2. Remove completely from heat and add the vanilla extract, hot cocoa powder, and peanut butter directly into the sauce pan.  Stir to combine completely.  (Similar to many other peanut butter related recipes, I ended up digging in with my hands to make sure that everything was completely combined.  While it makes a bit larger mess, I’ve found that this mixes everything much quicker and more evenly.)
  3. Layer the parchment paper on the medium-sized pan.  Use your large ladle to scoop and drop cookie-sized portions onto the parchment paper.
  4. After dropping all of the cookies on the parchment paper (I use all of the mixture to make the cookies), put into the refrigerator to allow the cookies to cool and harden.  Leave for about 1 hour; up to 3 hours preferred.  Store extras in the fridge up to 1 week.
