Healthy Dessert Recipes, Including One Ingredient Ice Cream

By the name of this blog, as well if you’ve been reading for some time, we all know I have a sweet tooth for days.  I swear that it may be genetic, but I have to consistently allow myself one sweet a day – typically chocolate – or I feel as though I’m deprived.  (Okay, not technically deprived, but like I reeeeeally-want-some-chocolate deprived.)

While a tiny bit of dark chocolate or other sweet isn’t terrible in moderation, I am now to the point that I usually prefer to try to beat my sweet tooth with a healthy alternative.  Using the right ingredients, it’s entirely possible to eat something tasty to curb your sweet tooth, while still getting a healthy, satisfying snack out of the way.  Plus, what’s even better is that these usual “clean eating” recipes are becoming even more mainstream, meaning that all of the ingredients are usually very easy to find.

My Favorite, Healthy Desserts

  • Microwaveable Apple Crisp – Incredibly tasty, but the green apple gives a little dash of tart flavor for an extra zing
  • 30-Calorie Cookies – These little delicacies are vegan, no sugar added, and gluten free.  But most importantly for our purposes today, they’re as tasty as anything.  The good news is that you can absolutely have more than one while still feeling like a champion!
  • Coconut Date Balls – This recipe includes a lot of sugar, but the ingredients are all-natural to the point that it even fits into Paleo diet plans.  I’d recommend only having one, but they’re a perfect pick-me-up or sweet treat if you have a hankering throughout the day.
  • No Bake White Chocolate Cranberry Cookies – This recipe includes several ingredients (10 is a lot in my book!), but once you have them together, it’s a snap to whip these up in the kitchen.  This little snack is vegan, Paleo, and dairy-free, but essentially tastes like you’re eating cookie dough.  Nothing wrong with that in my book!
  • Frozen, Fruity Yogurt Bites – This is one of the easiest recipes I’ve ever made.  I mean, it’s on a kids cooking website, so it can’t be that difficult, right?  But more importantly, these hit the sweet spot (haha, get it?) with 100% healthy ingredients.  Just make sure that you don’t get the entirely sugary yogurt to completely ruin the health factor.

One Ingredient Banana Ice Cream

I decided that it’s time to add onto this list of desserts with probably the easiest recipe of them all… banana ice cream.  The best part about this recipe is the versatility.  I used an over-ripe banana, but feel free to use one directly from the store.  If you want more ice cream to serve more than one person, then by all means, toss in a few bananas.  It’s also incredible easy to add in a few ingredients to make this recipe even sweeter – I love to add in a scoop of peanut butter or a small handful of chocolate chips when I feel like I need the extra kick.

So how is this stuff made?

banana1 Start with a frozen banana and slice it into small pieces.  If you are not starting with a frozen banana, don’t fret.  Just slice up the banana as is, put into an air tight container, and put in the freezer for a couple of hours.  Ultimately, we want the banana pieces to feel like ice cubes.

banana2 Peel the slices and toss into the blender or food processor.  Either one works, but make sure that you have enough banana or a small enough container to be able to reach each of the tiny banana pieces.  I used my Ninja with one of the small cups built for making smoothies.

IMG_4436 Blend away.  Because the banana pieces do get pretty small, you’ll likely have to turn off the blender and scrape the pieces off the sides a few times.  I typically do so five-ish times to make sure that I’ve blended every bit.  It will first look like chunks, then just some weird gooey texture, then oatmeal, and finally it will look like melted ice cream.  Don’t get impatient with this step, because it will likely take ~10 minutes total.

banana4 Once the banana is thoroughly blended, it should be a texture similar to the title image.  From there, put into an air tight container to re-freeze for a couple of hours.  Feel free to eat immediately, but the real ice cream texture does come after this step.
