In a State of Transition

The universe has me in an interesting state of transition right now.  Everything I’m handling is both very permanent and not permanent at all.

My living situation is temporary, leading to several of my relationships to be temporary, work and our team is ever-changing, and I’m consistently growing in personal and physical development areas of my life.

It’s almost as if the universe slapped me in the face and said, “Okay 2017, we’re going to tear your life apart. 2018, you can stay pretty stationary to heal. But 2019, just wait… you’re going to be running at a whole new speed.”

With all of this transition comes a lot of hope. I’m trying to take advantage of this weird time in my life in the only way I know how. Lots of time in conversation with and in the presence of the people that matter. Lots of time focused on personal development. Staying focused on spending time doing the things that I love and that are helping to better myself – the things that fuel and empower me.

This year, less than two months in, has created space for so many new, deeper feelings that I didn’t know I had the capacity to feel. I love much deeper than ever before, I cry about anything and everything that’s happy or sad, and I’ve learned to stop taking everything so personally.

Over time, I’ve learned that each season of life has a purpose. And I’m so excited to find out where this season leads.

Chocolate Chip Cookie Cheesecake Bars

For the most part, I’m healthy, but sometimes, just sometimes… I just want dessert without the pressure.  99.9% of the time I’m an abstainer when it comes to food, but I’ve learned some tricks of the trade.  The first one being that I decide to actually plate everything I eat – including dessert.

Related to Chocolate Chip Cookie Cheesecake Bars, I’ll plate just one for a snack around mid-day.  It gives me the delicious, melt-in-your-mouth goodness that I’m looking for, without giving me the guilt I would feel if I just reached into the pan to enjoy just one.

Chocolate Chip Cookie Cheesecake Bars

High Altitude – Prep Time: 10 minutes, Bake Time: 35 minutes

Total Time: 45 minutes

Yields: 16 Bars

Ingredients

  • 1 tube of pre-made chocolate chip cookie dough
  • 1 8oz. tub of cream cheese
  • 1/2 cup sugar
  • 1 egg

Directions

  1. Pre-heat the oven to bake at 350 degrees Fahrenheit.  Spread 3/4 of the cookie dough in the bottom of a non-greased 8×8 pan.  Use a spatula to even out the top.
  2. In a large bowl, combine the cream cheese, egg, and sugar.  Whisk until completely mixed.  Pour this mixture on top of the cookie dough.
  3. Break apart the remaining 1/4 of the cookie dough and drop it sporadically on top.  This should almost cover the entire pan.
  4. Bake for 35 minutes or until a toothpick inserted into the center of the pan comes out clean.  Allow to cool for at least 10 minutes (though I think these are even better the next day!)  Enjoy!  Enjoy covered for up to one week.
