Caprese Grilled Cheese

This Caprese Grilled Cheese sandwich is almost too easy to count as a recipe.  But it’s also too good to skip!  Mixing the flavors of my favorite Caprese salad with the how-to’s of a grilled cheese makes a tasty lunch you’ll want to enjoy regularly.  Scroll to the bottom to reach the recipe immediately, or keep reading for the weekend catch up!

Weekend Catch Up


It’s a new day, new week, and new adventure here on SST, so I’m extra excited on this beautiful Monday morning!  But before I get ahead of myself, I wanted to share a bit about this past weekend, because it ended up being even more active than anticipated.

Ray was out of town over the weekend, so I decided to make it a girls weekend to remember.  While I absolutely LOVE living with and being married to Ray, it does mean that I get to see my girlfriends a bit less.  So catch up time was definitely in order.

Friday

Friday night, my blogger friend Abby invited some of us blogger gals out to a Fashion Show Fundraiser for an amazing organization called Urban Peak, which serves youth experiencing homelessness in the Denver metropolitan area and Colorado Springs.

The event, called Urban Nights, highlighted the work of 13 fashion designers on a MASSIVE runway.  The event featured rep carpet glam, a silent auction, a live auction (including a same-night private flight and stay in Vegas… WHAT?!), and fantastic fashion from around the globe.  Plus, hanging out with my blogger girls is always a good time. 🙂

Saturday

Saturday started off bright and early with an 8 A.M. Bikini Body Guide meet up in downtown Denver.  And your’s truly led the workout!  Lots of burpees, mountain climbers, and fun times with the BBG Denver girls.

About an hour after I got home from our workout, I headed out for a camping excursion with five other girlfriends, many that you’ll recognize from my Blackhawk Bachelorette party.  I had mentioned once that I don’t get why everyone in Colorado goes camping all of the time when we pay rent to live indoors.  To which they somehow convinced me to go camping ONE night.

And it ends up, I LOVE camping!  We were able to canoe on Lake Dillon, enjoy girl talk galore, make s’mores and tasty food on the campfire, and just relax.  I told the girls that, while I don’t picture Ray and I becoming regular campers anytime soon, I could go one or two nights a year.  And with that, an annual trip is in the works!

Sunday

Early Sunday we enjoyed some breakfast burritos that one of the girls had made in advance, the other girls enjoyed some coffee from a french press (I had hot water), we packed up and headed on our merry way relatively early.

After getting home around 11 A.M., I spent 5 hours cleaning my place (I SWEAR it’s a little bit cleaner) and had an evening wine/facetime date with a girlfriend from Chicago.  It was a great way to keep in touch and stay up to date on one another’s lives and I loved being able to reconnect.

But now, to the recipe that I enjoyed last night that was perfect to serve one, but would have been equally as delicious to multiply.  Yummin!

Caprese Grilled Cheese

Caprese Grilled Cheese

Prep Time: 5 minutes; Stove Time: 6-10 minutes

Total Time: 11-15 minutes

Serves: 1 adult

Ingredients

  • 2 slices of bread (I used traditional rye bread)
  • 4 slices of fresh buffalo mozzarella cheese
  • 2 slices of a large, red tomato
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh basil
  • 1 tablespoon balsamic vinegar

Directions

  1. Lightly toast your slices of bread to give them a slight crisp immediately.
  2. Assemble your sandwich in the following order, with ingredients evenly distributed across the sandwich bread: slice of bread, both slices of tomato, all slices of cheese, all balsamic vinegar, fresh basil, topped with the other slice of bread.
  3. In a skillet, drizzle your olive oil evenly and heat on medium heat.  When pan is hot, add your sandwich and cook for 3-5 minutes on each side, carefully using a spatula to flip.  Enjoy when both sides of the sandwich are golden brown.
