1-Minute Berry Ice Cream is a reader submitted recipe, originally from Jamie Oliver.  Sweeter than most healthy “ice creams” I’ve tried, but still definitely healthy, it’s a delicious treat that is sure to crush that sweet tooth without ever ignoring your meal plan.

Getting Out of the Funk


Happy Friday!  After a Pure Barre x Suja Juice event on Wednesday night, followed immediately by a trunk show for a good friend Hannah’s new business, I feel completely out of my funk.  I know that I still have a ton on my plate and am still very behind on my work (along with pretty much everyone else in the world.)  But I feel rejuvenated and ready to take on the world!

You know those times when you’re just stuck in a “funk.”  Nothing seems to be going your way.  (Heck, the mail tape wouldn’t even work correctly for me when I was trying to mail the veil home that I borrowed from my friend for our wedding! – Thanks for letting me borrow that, Jessica!)  We know that our problems are relatively still very, very small… but you still feel stuck.

There are few times in our lives that feel better than that moment – that split second – when you wake up unstuck.  You have an epiphany and clear vision about where you are supposed to go.

Remember that it sometimes takes a while to get to that unstuck place.  But we will all get there.  And the most beautiful moments are so worth those tough times in life.  It’s moments like this morning that I feel so happy to be alive and I just cannot wait until what’s next – whatever that may be.

But now, onto our delicious recipe…

1-Minute Berry Ice Cream

There are two things that I’ve recently discovered and have almost (re-) taken over my life.  Healthy ice cream and Jaime Oliver.  (See here for a recent healthy frozen yogurt recipe, and here for some of the Jamie Oliver recipes we’ve been trying through Hello Fresh.)

Both are seemingly random together, until… one of you guys contacted me about a Jamie Oliver 1-Minute Berry Ice Cream recipe that we cannot stop eating in our home!  (Thank you, Ally!)  I haven’t found the recipe anywhere online, so I knew that I had to share ASAP.

This recipe is very similar to the Quick, Tasty, Healthy Frozen Yogurt recipe I shared a while back, but with some notable differences.  My thoughts that are that the changes make the recipe sweeter and more what I would eat if I’m looking for an ice cream-type feel, rather than the more smooth, creamy texture I’d be wanting with the frozen yogurt.  Both are delicious and we’ll be enjoying them equally for the foreseeable future.

1- Minute Berry Ice Cream

Total Time: 5 minutes

Serves: 6 adults

Ingredients

  • 1 cup fresh blueberries
  • 1 12-ounce bag of frozen mixed berries
  • 12-ounce natural yogurt (I went with vanilla, because I don’t see why not)
  • 3 tablespoons honey
  • 7 sprigs of fresh mint (stems removed)

Directions

  1. Put the yogurt, honey, and 5 sprigs of mint into a food processor and mix on medium for 1 minute.  I stopped mid-way through to scrape down the sides.
  2. Add the frozen berries to the food processor and mix on high for 2 minutes or completely combined.  I stopped once to scrape down the sides.  I would recommend not mixing until entirely smooth to leave a bit of the grainy, ice creamy texture.  Put in the freezer for 10 minutes if you prefer an even thicker texture, but I’ve been enjoying immediately.
  3. Divide the fresh blueberries evenly into 6 glasses or bowls.  Top with a scoop of the berry mixture and toss a few remaining mint leaves on top.  Enjoy!
