Sparkling Blueberry Lemonade

Sparkling Blueberry Lemonade is perfect for this Summer to Fall transitional season.  Not as tart as traditional lemonade, but still with a sweet kick of sugar, this delicious, nonalcoholic beverage is difficult to put down.

Quick Catch Up

I feel like I’m in a whirlwind of catch up this week and we’re only halfway through it!  One of the perks of working from home within a solo small business is that your can make your own schedule and travel on random days.  (Thus why I travelled home on Monday mid-day.)

But sometimes you also forget that the rest of the world doesn’t stop, too.  This makes email the next day a bear.

I shouldn’t be complaining, because I truthfully love the work that I do.  But sometimes it’s difficult to have so many projects going on at one time!

The rest of this week will be filled with a Pure Barre x Suja Juice class tonight, followed by a J Hilburn trunk show.  Then Thursday I’ll be getting my hair cut – it’s been over a year since my last cut to grow it out for our wedding, so it’s time.  And Friday we have an engagement party for some of our wonderful friends.  It’s looking like a beautiful rest of the week.  What are you most excited about in the weekdays you have left?  (Follow me on SnapChat and Instagram to stay up to date on all the fun!)

Needing a little spike of energy yesterday, and wanting to crush my typical sugar craving that happens what I’m tired, I decided to make myself a little less tart version of lemonade.  (Because lemonade is just a bit too tart for the Fall season, ya’ know?)

This treat hit the spot and gave me the slightest sugar rush to push me through the end of the day.  Feel free to leave it nonalcoholic, as I did, or add a little Vodka if you’re looking for an extra kick over the weekend!

Sparkling Blueberry Lemonade

Prep Time: 10 minutes

Total Time: 20 minutes

Serves: 4 adults

Ingredients

  • 2 cups ice cubes
  • 2/3 cup granulated sugar
  • 2/3 cup room temperature water
  • 1 1/2 cups fresh blueberries (aka, one small carton from the store)
  • 3/4 cup lemon juice
  • ~3 cups sparkling water

Directions

  1. Combine the sugar, room temp water, blueberries, and a tablespoon of lemon juice in a pot.  Bring to a boil on medium and allow to simmer lightly for 8 minutes.  The sugar should be completely dissolved and the blueberries should be mushy by this point.
  2. Pour the mixture through a sieve into a bowl.  Dispose of the sugary blueberries left in the sieve (or save to top ice cream at a later point!)
  3. In a blender, combine the blueberry/sugar mixture, ice cubes, and remaining lemon juice and blend until almost smooth.
  4. Separate the mixture evenly into four 8 ounce glasses.  Slowly stir in sparkling water until each glass is almost full.  Top with a sprig of mint.
