Weekend Catch Up

I’m finally feeling (closer to being) caught up from my time away.  All I wanted to do this weekend was relax – and that’s exactly what we did.  We spent a lot of time at home, I prepped some of the recipes that needed to be ready to go this week, we went to church, we completed several errands, I’m finishing up a freebie that will soon be available to you guys (HINT: it’s all about great mental habits), and I’m in the middle of prepping for being out of town in the week ahead.

The down time was exactly what we needed!

Meet Me at The Barre Code

Today, I am INCREDIBLY excited to announce that I will be hosting a class at The Barre Code in downtown Denver alongside my good friends Natasha of Polished Avenue and Rebecca of The Novice Native.  I’ve spoken about my love for The Barre Code before, and I’m so excited to be able to share that love with you guys.

Our class will be on October 16th at 12:30 pm at their downtown Denver location.  I’ll share out the link and discount code (the class is only $5!!) this week, so be on the lookout!

Mediterranean Chopped Salad

This past weekend, during our lounge-fest of 2016 (we don’t get many of these), I knew that I wanted to focus on eating healthy, nutritious food as much as possible.  Yes, October is National Pizza Month, but with all of the sitting we were doing, nutritious food was the way to go for these few days.

Mediterranean Chopped Salad is essentially a delicious, nutritious combination of several ingredients that we had available in our home.  But the overall effect was SO good that Ray and I made it several times across the weekend.  It was the perfect recipe to kick off this fresh week!

Mediterranean Chopped Salad

Prep Time: 10 minutes

Serves: 4 adults

Ingredients

  • 1 can canned garbanzo beans (drained)
  • 1 medium-sized cucumber (chopped)
  • 2 tablespoons fresh basil (chopped)
  • 1 yellow bell pepper (chopped)
  • 3/4 cup cherry tomatoes (quartered)
  • 3 cloves garlic (minced)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon balsamic vinegar
  • Salt & Pepper to taste

Directions

Combine all of the ingredients in a large bowl and serve.  Enjoy!  (Store in an air tight container in the refrigerator up to one week.)
