Hearty Pancake Mash

Just as easy to make as pancakes, but heartier and healthier.  This Hearty Pancake Mash is the perfect cold weather breakfast that will leave you satisfied for hours.


Happy Wednesday – we’re halfway there!  While most weeks, I’m looking forward to every day, excited about the opportunities ahead, I’ve honestly been struggling this week.  I’ve felt more stress and anxiety than normal.  I still cannot tell if this is a good thing or not – I typically feel a lot of pressure and resistance just prior to something big coming my way –, but I do know that I needed some healthy comfort food to make me feel extra cozy.  And yesterday morning, this delicious Hearty Pancake Mash hit the spot!

This recipe was originally a pancake recipe from Ray’s mother.  It was delicious, but I decided that the texture of a traditional pancake just wasn’t calling my name.  So I essentially made her original pancake recipe, then mashed it all up into one full jumble.

In terms of substitutes, I decided to use coconut flour instead of the traditional and whole wheat flour that are mentioned below.  This made the texture a little bit drier, but equally as delicious with a light hint of coconut added in.  I also sized this down quite a bit, since I was just making this for me.  Let me know if you make any adjustments to fit this within your diet.

Pancake Mash

Hearty Pancake Mash

Prep time: 10 minutes; Total time: 30 minutes

Serves: 6 adults

Dry Ingredients

  • 10 cups flour
  • 3 cups whole wheat flour
  • 3 cups crushed corn flakes or granola
  • 1/4 cup sugar
  • 5 teaspoons baking powder
  • 1 tablespoon baking soda
  • 2 teaspoons salt
  • Optional: 3 cups old fashioned oatmeal

Other Ingredients

  • 1 egg
  • 1 1/2 cup milk

Instructions

  1. In a medium sized bowl, mix all dry ingredients until well combined.
  2. In a separate, medium sized bowl, combine 1 1/2 cups of the dry mixture with the egg and milk.  Stir until the entire mixture is combined.
  3. Spray the base of a skillet with baking spray.  Pour around 1/5 of the mixture into the base of the skillet.  Once the bottom is close to a golden brown, flip the pancake.  Once both side are fully cooked, remove from heat and move on to the next pancake until the entire mixture is done.
  4. Optional, mash the pancake into mush while in the skillet and top with raspberries and syrup.  Enjoy!
