2 Ingredient Cookies & Cream Oreo Bark

This recipe for 2 ingredient Cookies & Cream Oreo Bark is incredibly simple and equally delicious.  It’s the ideal treat to make to please everyone you know, and the perfect little snack for cheat day.  Scroll to the bottom of the post for the full recipe, or keep reading for a quick catch up.  Enjoy!

For those of you that don’t follow my Instagram Stories, there have been some major shifts in my universe in the past few weeks.  And it all started on Tuesday, April 9th.

Almost everyday, I’ll go head out on the mountain for a couple hours of activity – hiking, skiing, touring, you name it and I’m probably game.

So on this particular Tuesday, I headed out to get a couple of hours of skiing in at the nearby Arapaho Basin.  Jump to my second run of the day, and I fall big time, but my skis stayed on.  While I was a little shocked, I wasn’t in any pain… until I tried to stand up.

The guy I was skiing with (Phil, otherwise known as my life saver) skied down and grabbed ski patrol.  I was a little banged up, but decided just to ice my knee and limp my way home.

In the following week, I got an x-ray, which showed nothing, and two independent doctors checked and said that everything was looking like a sprain.  Though my second doctor (and good friend Jace over at Well Set) did suggest that I get an MRI if possible, just to be safe.

When the MRI results came through, we were all a bit shocked… complete ACL tear, sprained MCL, and bruised femer bone. We’re also seeing a tiny something strange on my Miniscus, but that’s TBD.

In the past few days, I’ve gotten two opinions from various surgeons, and surgery is definitely the answer. I’m just narrowing down my selections based on a couple of factors, but I’ll be sure to keep you in the loop on my Instagram Stories, as well as sporadically on the blog.

But in the meantime, please send some good vibes, prayers, and happiness my way.  I’ll take all the good luck I can get!

2 Ingredient Cookies & Cream Oreo Bark

In stressful times, I crave sweets.  I don’t need to eat sweet food all day long, but without a little dessert, my day just doesn’t feel complete.

Thus why simple recipes like this one are on my radar.  Two ingredients, hardly any prep time at all, and absolutely delicious in every way.  The perfect recipe for when you want a little taste of something sweet… or when you want to devour the whole thing. 😉

Cookies & Cream Oreo Bark

Prep time: 10 minutes; Cool Time: 20 minutes

Total Time: 30 minutes

Serves: 12

Ingredients

  • 13 regular Oreos (10 to be mixed in, 3 for topping)
  • 11 oz white chocolate chips (I used Ghirardelli because they were the only ones that we had available in store that weren’t in a massively large package)

Materials Needed

  • 8×8 pan
  • Tin Foil

Directions

  1. Crush up 10 of the Oreos (I did by slicing them will a butter knife.)  At the same time, follow the directions on the white chocolate package to melt the chocolate.  (If you’re using Ghirardelli, pour the chocolate chips into a microwave safe bowl and microwave on medium for 1.5 minutes.)  Allow the chocolate to cool slightly for about 5 minutes.
  2. Slowly add the Oreos to the melted chocolate and stir to combine.  Lines the 8×8 pan with tin foil with a bit extra available on both ends.
  3. Pour the chocolate/Oreo mixture into the lined pan and use a spatula to smooth out on the top.  This will ultimately create a thin chocolate layer on the bottom of the pan that is a slight grey color (pictured below.)
  4. Crush up the remaining three Oreos and sprinkle evenly on top of the chocolate mixture.  Allow to chill or cool until the chocolate becomes solid.  Enjoy!
